Rice Siew Mai
糯米蘑菇烧卖
Ingredients (4 servings)

- ½ pack Round Dim Sum Skin (White/Yellow)
- 2 cups uncooked glutinous rice
- 1 tablespoon oil
- 15 dried shiitake mushrooms, pre-soaked and diced
- 2 shallots, minced
- 2 stalks spring onions, chopped
- 1 tablespoon Shaoxing wine
- 1 teaspoon salt
- 2 teaspoons light soy sauce
- 1 teaspoon dark soy sauce
- A pinch of five-spice powder
- ½ teaspoon sesame oil
- ¼ cup warm water
- ¾ cup frozen peas
Instructions

Cook glutinous rice according to instructions on package or rice cooker

Heat oil in wok over medium heat. Add mushroom and shallots to stir-fry until shallots turn translucent

Mix in spring onions, wine, salt, light soy sauce, dark soy sauce, five spice powder, sesame oil, and water

Cook mixture for 1 minute. Stir in cooked rice and green peas evenly and turn off heat

Prepare steamer by lining with a layer of damp cheese cloth or brush with oil to prevent sticking on the tray

Place 1 generous teaspoon of filling in the middle of dim sum skin. Squeeze around the skin to form the shape

Place the siew mais about an inch apart from each other in the steamer. Garnish the top with some chopped spring onions

Steam for about 5 minutes and serve immediately with dipping sauce of choice
