Noodles with Vegetables
蔬菜炒面
Ingredients (2 servings)

- 1 piece HK Yee Fu Noodle/Vegetarian Noodle
- 3 tablespoon cooking oil
- 1 teaspoon sugar
- 1.5 L water
- Spring onions or coriander (optional)

Vegetable mix
- 1/2 carrot (shredded)
- 1/4 cabbage (shredded)
- 4 dried shiitake mushroom (pre-soaked and thinly sliced)

Seasoning
- 4 tablespoon stir-fry sauce (or oyster sauce)
- 1 tablespoon light soy sauce
- 1 teaspoon sesame oil
Instructions

Place noodles in a large bowl and pour boiling water to soak for 2 minutes. Loosen up noodles occasionally with a fork or chopsticks. Drain noodles and set aside

Heat up saucepan, then add cooking oil and sugar until caramelized

Add vegetable mix, noodles, and seasoning to stir-fry

Stir-fry to evenly toss noodles evenly at low heat

Garnish with spring onions or coriander (optional) and serve
