Noodles with Vegetables

Ingredients (2 servings)

    • 1 piece HK Yee Fu Noodle/Vegetarian Noodle
    • 3 tablespoon cooking oil
    • 1 teaspoon sugar
    • 1.5 L water
    • Spring onions or coriander (optional)
  • Vegetable mix

    • 1/2 carrot (shredded)
    • 1/4 cabbage (shredded)
    • 4 dried shiitake mushroom (pre-soaked and thinly sliced)
  • Seasoning

    • 4 tablespoon stir-fry sauce (or oyster sauce)
    • 1 tablespoon light soy sauce
    • 1 teaspoon sesame oil

Instructions

  • Place noodles in a large bowl and pour boiling water to soak for 2 minutes. Loosen up noodles occasionally with a fork or chopsticks. Drain noodles and set aside

  • Heat up saucepan, then add cooking oil and sugar until caramelized

  • Add vegetable mix, noodles, and seasoning to stir-fry

  • Stir-fry to evenly toss noodles evenly at low heat

  • Garnish with spring onions or coriander (optional) and serve
